I had this in Goa. and the taste is still in my tongue. i tried making it at home. trust me its the best thing to eat if ur a fish lover or sea food lover. today i made prawns. but it can be made with any fish or chicken.
INGREDIENTS 10 whole shell-on prawns or just like i do take off the shell so that the butter consumption is less., weighing about 400g (1 lb) 30ml (2 tbsp) butter rock salt 2 cloves garlic, crushed 1 lemon, cut into wedges
1 lb large or small prawns
Oil 3 tablespoons and 5 tablespoons butter for deep frying
6 chilies (chopped)
3 sprigs of curry leaves (use only the leaves)
3 cloves garlic (finely chopped)
1/2 teaspoon salt
1 teaspoon sugar
1/2 teaspoon soy sauce if u want thts an option. i dont add soya sauce as i enjoy the buttery flavor more.
6 tablespoons of grated coconut (dry fried until golden brown) its again optional. i enjoy it both ways.
With a sharp knife, score down the back of the shrimp. Remove the thin, digestive tract with the tip of the knife. Repeat with the rest of the prawns. Rinse the prawns under running water and pat dry with paper towels.
Melt the butter and generously grind salt in a large frying pan. Add the garlic and prawns, and fry over a high heat, stirring, for 3 – 4 minutes until the prawns are pink. Serve immediately with lemon wedges. NOTES To serve more people, simply multiply the ingredients accordingly.
the other way i do it is :
Melt the butter, add chilies, curry leaves, garlic, salt and fry for 2 minutes or until fragrant. Add prawns, sugar, soy sauce, wine, and grated coconut. Cook over high heat for 1-2 minutes, stirring frequently. Serve immediately.
