There are times i dont get fresh lemon grass and i prefer to use either fresh or home made products. So for all who like to make spices and herbs at home , here is a simple way to dry and store for future use.
1) wash them properly
2) Chop fresh lemon grass / tea leaves/ neem/ tulsi/ mint, etc.
3) dry them indoors
4) store them for further use.
Lemon grass can be used in any cuisine may it be south indian , north indian, etc. Upma, tea, vegetables, noodles, omlet, chicken, etc.
Use of lemon grass can be as frequent as use of coriander leaves.
